Week in Review: February Vacation, The Second Half

Happy Monday!  I never got around to posting at the end of last week but nobody cares so here we go!

Good Doers

Maggie comes home from her mission trip in Texas tonight and we've missed her so.  She just absolutely will never be allowed to go to college m'kay?  I am going to ask her to write a post about her experiences because it seems to have been life-changing from her texts and photos.  We are so so proud of her servant heart.  I'll just leave you with a few photos for now:





Good Days

The weather started warming up into the 40s lately which means lots of outside play time.  Phil brought the littles to kick field goals and Declan has the skills!  Not surprising since he is a soccer player, but it's crazy how much he is like a mini Andrew who was the kicker for one Covid weird fall two season of Varsity football.


We brought the youngest three boys and Gammy and Grandpa to lunch at a restaurant with a "waterfall" (it's an old mill) and it was delicious and fun:


Good Eats

I made pistachio crusted salmon by putting a thin layer of mayonnaise on the salmon, chopping up some salt and vinegar pistachios and sprinkled them on top, then cooked in the air fryer for about 20 minutes, and an arugula salad with sunflower seeds and shaved parmesan.  Oh man I'm still thinking about that dinner.

I've been watching some very interesting documentaries and *almost* documentaries lately, which are my favorite genre.  I love a good conspiracy theory!



This story about the first lady of France is crazy and a little hard to follow so I will definitely be reading the book:

Good Buys

I found out that my favorite lotion to put on my face at night comes in a fragrance free option, which is good because some men in my house steal it and at least they won't be smelling like a lady.


This sweatshirt is fleecy soft and I have it in three colors and it's a great price right now!  I think the sleeve detail makes it look like a step up from a sweatshirt, and I get away with wearing it to work :)


I saw that Target was having a sale, and ordered Eamon some sheets in both navy and gray and a reversible navy/gray comforter for college...which he still hasn't decided on but we know he's going away no matter what.  He's actually returning home tonight from a trip out to Franciscan to visit Andrew.

And today is the last day of JP being 21 and his mother being 45.  Double birthday tomorrow with all of my chickadees back home - except the college boy - which is the greatest gift of all!

  1. We care! I noticed that you didn't post. (Trust me, I shuffle though the internet on the weekends hoping someone posts! ) However, I figured you were busy or sick, and hoped for the best.
    Has Eamon gotten financial aid packages yet? I hope he can go someplace great that won't burden him with loans! (I have another year or three off from college searches, so I can sit on the sidelines and cheer for your guy.)
    You can now have Maggie help with home repair - you have visual evidence that she can scrape and spackle! May St Christopher watch over her and her friends on their trip home. - mbmom11

    1. Eamon's gotten most of the packages, he's still waiting to hear from Providence College but knows it will be too expensive no matter what they give him. His best deals for Catholic colleges are Ave Maria and Franciscan, both around $12,000 a year.

  2. Oh I would LOVE a Maggie written post to hear about the trip! And I noticed too! But hoped it meant you were doing something fun, which sounds like it was or at least keeping busy. Happy Early Birthday!!!! How blessed this Earth is that you came to it! JP as well of course.

  3. I look forward to hearing about Maggie's experience. Look at her doing all the things. Great. And Declan looks like a natural kicker. We steered clear from football (aside for Lad and we aren't sure how that happened), but if a team wanted one of our kids to be a kicker, I think I could've allowed that. Lunch with grandma sounds lovely. That sweatshirt is really cute, and looks long enough to wear with leggings. Hmm. Documentaries are my fav and my bestie recommended the Vinegar one, but I haven't watched it yet. I don't like fish - I wish I did. Your salmon recipe might be enough to push me to try it. It sounds yummy. I think for me, it's a texture thing. Ugh.

We also said no football...then Covid happened and Andrew could play soccer in the fall as usual, AND become the kicker for the football team in the Second Fall Season that took place in Feb and March that year. He did amazing at it and wished he could keep kicking but went back to soccer the next fall.

      The sweatshirt is indeed long enough to wear with leggings :)

      I tend to overcook my salmon so the texture is more meaty, maybe you would like it?

  4. Brb, changing my menu plan to include that chicken! Wonderful work Maggie (you must be so proud of her).
    What are other conspiracy movies/documentaries do you recommend? I enjoy them too (also give me a 'corrupt cop' movie anytime haha -like Serpico) but that "pic" of Brigitte Macron was of her brother, evidently.

    1. It was salmon! But it could probably work with chicken :)

      In no particular order, I liked Blackfish, Dopesick, Quarterback, The Last Dance, The Perfect Wife, McMillians from what I can remember off the top of my head!

  5. We need to hear all about Maggie's trip. I know you'll certainly miss having some estrogen in the house one day. :)
    Your salmon does look great---even though salmon is the only fish I don't enjoy. I could try that method on something else!
    The Scamanda podcast was insane, need to watch the show. I just heard that she and her husband are getting a divorce. I mean, he's still married to her? WHAT?
