Mexican Dump Soup

  We call it Mexican Dump Soup that because this soup has a Mexican spicy flavor, and a lot of ingredients (add some more, omit others - whatever!) that you just dump into one pot.  Easy Peasy!

Heat 2 TBS olive oil over medium heat in medium sized pot.

Into pot goes one large onion and 3 celery stalks, chopped:

Chop one red (or green or yellow or whatever you have) pepper and add it to pot:

Have your child slave helper peel two carrots:

Then dice and add to pot:


Sauté the veggies for about 10 minutes until soft.

Add 2 cloves of peeled garlic:

Add 1/2 tsp. red pepper flakes:

 And 1 TBS chili powder:

Then 1 1/2 TBS of chicken bouillon base:

And get that helper back in the kitchen to measure and pour 4 cups of water into pot:

 Open a can of black beans and a can of corn:

Rinse and drain and dump into pot:

Finally dump a 28 oz. can of tomatoes into pot:
 

Let it all simmer for about 20 minutes:

Crush some tortilla chips into bowl and sprinkle cheese on top (unless you want to be healthy, in which case you should avoid the chips and cheese):

Some people prefer Doritos:

While others prefer to eat without a baby on their lap, but said baby didn't agree with that preference:
(Yes, that's a pajama shirt, and yes, I did give him some of my corn. Because, really, who could resist that face?)
